Tofu gratin
(Serves six to eight)
Ingredients
2 silken tofu cakes, drained and chilled
2 tbs olive oil
2 tbs flour
2 cups soya milk
1 tbs white miso paste
1 tsp sugar
1 tbs rice wine
Bonito flakes and shredded nori seaweed for garnishing, both available at the Japanese section of supermarkets
Method
Heat olive oil over a gentle flame and add flour, whisking briskly to form a roux (paste).
Add soya milk slowly to the paste, whisking all the while until a sauce forms and thickens.
Add miso paste and continue whisking, then season with sugar and rice wine.
Heat oven to 180 deg C.
